Apple, Walnut & Raisin Muffins (one dozen)

These amazing muffins, made with NY state apples, jumbo California raisins, and walnuts are delectable, keep amazingly well (made with vegetable & yes, a little olive oil, instead of butter) are incredible.  A huge favorite with the staffs of nearby Glimmerglass Opera for years we often call them Opera  Muffins!.
